2022 Biscaye Baie Sauvignon Blanc This is a bright, crisp and lightly herbal wine with green fruits and bright acidity from the region of Cotes de Gascogne. This classic white wine has become the flagship of regions such as New Zealand where its quintessential racy acidity & overtones of pink grapefruit have come to be dearly loved by wine drinkers. It lends the acid structure & green herb notes to its offspring, Cabernet Sauvignon.
Tea Rose - goat milk, Capriole, Inc. Greenville, IN
Most people won’t think that Indiana is part of the South, but the residents of Greenville, IN like to think of themselves as Kentuckians. Or at least this cheese maker does, so we include this in our local selections. Judy and Larry Schad purchased their farm in the early 1970s and unbeknownst to them, it was originally owned by Larry’s great-great-grandfather who owned it in the 1870s. Few Americans were running cheesemaking operations back in ‘70s so it was up to Judy to set some standards. She was on the forefront of American farmstead production. Tea Rose is a fresh, simple goat cheese with a lovely rose petals and herbs coating. The rose petals on the rind add a tinge of pink to the normally stark white paste. The cheese is crisp and bright with an herbaceous note.

2021 Marc Bredif Chinon (Cabernet Franc)
Cabernet Franc's spiritual home lies within areas such as Chinon in the Loire Valley & Bordeaux France where it is often used for blending purposes with its progeny, Cabernet Sauvignon. This bright ruby red wine has intense, refined and fruity aromas. There are nuances of cherry, strawberry and spicy notes. In the mouth, it has a subtle attack and a fruity, medium bodied structure. The finish is both aromatic & fresh.
Barely Buzzed - cow milk, Beehive Cheese Co, Uintah, UT
Compelled by a deep desire to slow down from the frantic pace of corporate life, brothers-in-law Tim Welsh and Pat Ford decided to join forces in 2005 and create Beehive Cheese. Their unique creations, developed in partnership with Utah State University, are cheddar-style cheeses made from pasteurized Jersey cow milk supplied by local dairies that do not use hormones, antibiotics or chemical fertilizers. The cheese rind is developed by hand-rubbing a combination of finely ground espresso coffee beans, lavender and vegetable oil onto the wheel, which imparts a mellow earthiness to the interior. Barely Buzzed is a full-bodied cheese with a nutty flavor and smooth texture.

2020 Lydian Cabernet Sauvignon
In music, Lydian refers to a mode, or scale that is used as a building block for some of the world’s oldest and newest masterpieces. This happy-sounding mode brings joy on its own, yet when molded and crafted by talented musicians can become a work of timeless art. You can view Cabernet Sauvignon as the Grammy nominated song spun together by two independent artists, Sauvignon Blanc & Cabernet Franc, and is the record no generation can ever put down. This Cabernet is full-bodied and rich, with notes of black cherry, currant, dark chocolate, and fresh herbs.
Secret de Compostelle - sheep milk, Fromagerie Agour, Hélette, France
Any Frenchman in the second millennium making the pilgrimage from the Pyrenees to the (presumed) tomb of St. James in Santiago de Compostela would need a hearty cheese to take along on their journey. Le Secret de Compostelle’s sister cheeses, Ossau-Iraty or Abbaye de Belloc, may have made the journey, having been produced for centuries. This newer cheese symbolizes and celebrates the centuries of open passage and culture between the Pays-Basque in France and in Spain. Sheep’s milk of this style, by any name, has complex savory and irresistible, sweet notes. This cheese would make a nice garnish for a salad with roasted butternut squash and dried cherries.
